Focaccia Pan Toastie
The only down side to making your own bread is that it really doesn’t last long, often being stale by the following day. Usually there isn’t much left, but on that odd occasion when the Glam Teens don’t finish it all, I make Pan Toasties. Focaccia is particularly good for this because of the olive oil in the bake. You can put anything in the sandwiches that would go into a regular toastie.
Focaccia Pan Toastie
- 2 squares of focaccia (enough for 2 sandwiches)
- 4 tablespoons extra virgin olive oil
- 2 tablespoon balsamic
- 1/2 chilli finely chopped
- 1 clove garlic finely chopped
- 2 tomatoes
- 2 large thin slices cheese
- Equipment griddle pan or frying pan
Method
- Mix together, in a bowl, the olive oil, balsamic,chilli and garlic
- Slice the focaccia in half through the middle
- Brush the insides of the four pieces of bread with the olive oil mixture
- Slice the tomatoes and lay on the two ‘bottom’ slices of bread
- Top with the cheese
- Put the ‘lid’ on the sandwiches
- Brush to outside of the sandwiches with the olive oil mixture
- Heat a frying pan or griddle pan on a high heat
- Turn down to medium and put the sandwiches in the pan, leave to brown slightly
- After 3 minutes place a bowl or plate over the sandwiches in the pan. (This increases the heat and helps to melt the cheese)
- After about 5 minutes remove the bowl or plate and flip the sandwich
- Press down hard on the top of the sandwich with a fish slice to flatten the sandwich (like a toasted panini)
- Once the under side is browned about, 5 minutes, remove from the pan
- Slice in half lengthwise and serve with or without your favourite relish or sauce
Herbs and Heritage Tomatoes
Fresh herbs make all the difference to a summer dish and although the supermarkets keep a reasonable stock of both fresh cut and potted plants, there’s nothing like picking rosemary and sage from your kitchen door. (more…)
