Soups are comfort food, restorative and nourishing when you’re ill, refreshing and cool in summer, warming in winter. But Magic Soup is so much more than just a soup recipe book. With beautiful photography and remarkable original recipes, it covers soups from around the world as well as new takes on the wholesome and traditional.
This is a collaboration between Nicole Pisani who worked for Yotam Ottolenghi and Kate Adams who is the founder of The Flat Tummy Club. With an alliance of that calibre you can expect healthy soups as well as the use of interesting, unusual ingredients. The book is split into ten section for recipes. Starting with Stocks, and Quick Fixes, going on to include Cleansing, Old Wives Tales, Comfort, Feasts, Chilled. On The Side has wonderful recipes for Spelt flat breads, rye and caraway biscuits and an easy soda bread. At the back is a section for resources. Although most of the ingredients are available from large supermarkets, the Resources section lists specialist suppliers from grains and Chinese herbs to fish.
Who can resist making Magic Soup, a recipe Kate Adams discovered in Mauritius and is cooked by women after having a baby, “to get back in shape whilst getting as much nutrition as possible.” It’s a warming split pea soup topped with spiced spinach and onions. Really fragrant and appetising.
Some of the dishes are more like stews than simple soups and my favourite of those is the Braised Beef, Heritage Radishes, Baby Beets And Horseradish Cream. This is Sunday Lunch in a bowl, slow cooked brisket, deeply flavoured with red wine, baby vegetables poached in stock and the whole dish finished with horseradish and mascarpone.
I was delighted with the originality of this book, the fresh approach to soup and the stunning mixes of textures and flavours. Whether you’re looking for cleansing, comfort or Sunday lunch in a bowl, this book will do it all.
